You can also prepare a picnic in a healthier way, or simply add some more nutritious dishes and snacks to the classic picnic dishes. The ideas are also suitable for guests who do not eat meat, as we should definitely not forget about them.
Fruit or vegetable skewers
Fruit and vegetable skewers are prepared from different types of fruits and vegetables. For vegetable skewers, use raw or roasted vegetables (you can also combine both), in between you can add cheese or roasted tofu. In addition to fruit skewers, you can also serve yogurt sauce or melted chocolate.
Tomatoes with mozzarella
Cut the tomatoes crosswise into thin slices and place slices of mozzarella on them. Then salt, drizzle with olive oil and sprinkle with fresh or dried basil.
Mix chilled boiled barley, diced tomatoes, peppers and leeks, sweet corn, beans or chickpeas, feta cheese, olive oil, lemon juice and spices to taste (salt, pepper, chives). Barley can be replaced with buckwheat or millet porridge, quinoa or amaranth. If desired, we can also add nuts, seeds, tuna, avocado, lentils, beans, etc.
They are definitely indispensable at a picnic as well spreads. You can simply spread them on bread, crackers or dip different types of fresh vegetables in it.
Bean spread with sun-dried tomatoes
In a blender, mix the brown beans, sun-dried tomatoes, onions, salt and fresh pepper.
Using a mixer, mix the olives, basil leaves, pine nuts and olive oil into a smooth spread. For a spicy taste, you can add a little hot pepper or chili powder.
For the avocado spread we need avocado, fresh lemon juice and spices as desired (garlic, salt, pepper, parsley). Mash the avocado with a fork and mix all the ingredients well.
Chickpea spread is also easy to prepare, as you mix the chickpeas and cans, lemon juice, sesame paste (tahini), garlic, salt and olive oil in a blender until smooth. You can also add roasted beets or pumpkin puree to it, which will color the spread red or orange.
It is also a good idea for a picnic to combine both ingredients together and prepare humus with avocado.
You can also grill different types of vegetables such as zucchini, eggplant, mushrooms, peppers, corn, asparagus, cherry tomatoes or simply serve the vegetables raw. We should not forget about fresh fruit, which can be brought sliced with us in bowls, and to spice up the menu and snack, we can also include mixed nuts and dried fruits such as dried figs, apricots, plums, dates.
